Pinsa Cesare comes from an ancient Roman recipe. The dough is obtained using three different types of flour. Its original shape is the result of the manual processing typical of this spacial product.

Special dough with naturally leavened sourdough
With a natural leavening time of 72 hours, the sourdough starter enhances the quality of the flours used for the dough and brings out their natural fragrances, giving Pinsa Cesare an unmistakable taste that goes well with every ingredient.
Wheat flour
Ensures a high degree of hydration (approx. 80%) and makes it possible to produce a long-rising, low-calorie dough with a high protein content.
Rice flour
Retains and fixes more water inside the dough during baking, resulting in a product that is crispy on the outside and soft on the inside.
Whole Soy Flour
Provides important nutritional qualities and gives crunchiness and crispness with a very low fat content.
